Recipe: RJ reporter makes healthy stuffed pepper "boats"

This week I went in search of a quick and healthy dinner recipe and came across one for stuffed pepper “boats.” 

You will need: one pound of ground turkey, three bell peppers in assorted colors, one teaspoon of chili powder, one teaspoon of cumin, ½ teaspoon of black pepper, ¼ teaspoon of salt, ¾ cup of salsa, one cup shredded cheddar cheese. 

To make: Brown the ground turkey over medium heat until it is cooked through. Drain off any fat and place in mixing bowl. Add spices and salsa, mix well. Preheat the oven to 375 degrees. Remove the core and membrane from the peppers. Slice in quarters lengthwise. Place the pepper slices on a lined baking sheet. Fill with turkey mixture. Top with cheese. Bake for 10 minutes or until the cheese is melted. Serve and enjoy!
