While preparing for the Fourth of July I was keeping an eye out for some red, white and blue treats. I found this recipe online for patriotic red velvet cookies with white chocolate chips. I added blue M&M’s to make them more festive.
You will need: half a cup of salted butter, one cup brown sugar, two teaspoons vanilla extract, one egg, two and a half teaspoons red food coloring, one and three-fourths cups original Bisquick mix, one-fourth cup unsweetened baking cocoa, one cup white vanilla baking chips, blue M&M’s.
To make: Preheat oven to 350 degrees. Line cookie sheets with foil. In a large bowl combine the butter and brown sugar, mix until light and fluffy. Add the vanilla extract, egg and food color, beat until smooth. Add Bisquick mix and baking cocoa, beat on low until combined. Stir in vanilla chips and sort out blue M&M’s from package and add into bowl, stir.
Drop dough onto cookies sheets about two inches apart. Bake ten minutes. The cookies will look slightly underdone.
Allow to cool and serve!
