WALLINGFORD — Two local brothers with a “passion for barbecue” opened a Texas-style barbecue restaurant on Route 5 last week.
Roscoe’s Smokehouse is a mobile concession business that opened a permanent location at 211 S. Colony Road, formerly Anthony’s Subs. The restaurant offers smoked meats, breakfast sandwiches, southern comfort food and daily specials. Co-owner Dave Silvia said the restaurant opened May 7 and the neighbors “all came out in full force” to support the business.
“It’s fantastic. We opened (last) Tuesday and it got busier and busier as the week progressed,” Silvia said.
Silvia said the food truck business began five years ago with his brother and co-owner Tony “Roscoe” Silvia. The mobile trailer is 30 feet long, 8 ½ feet wide and is a full mobile kitchen with stoves, ovens and a refrigerator. Silvia said the trailer has been available for weddings, graduation and birthday parties, corporate functions and has been featured in fairs and festivals across the state
“We’re able to pull into anybody’s lot and do a party from 400 or 500 (people),” he said.
Silvia said the trailer will be used to smoke meats to be served at the restaurant. The addition of the trailer to the space allows the brothers to be able to cook and smoke more meats. Silvia said the most popular menu item so far is the brisket.
“We smoke our brisket, inject them, rub them, throw them on the smoker between 10 and 12 hours depending on how big the brisket is,” Silvia said.
The mobile concession truck was formally approved by the town Planning and Zoning Commission on Tuesday, pending that all adjustments to the landscape are completed in order to be fully compliant. The trailer will remain parked next to the restaurant when it is not at events.
“We had to do it in order to get the trailer here,” Silvia said. “We had to get a survey done on the lot in order to pass inspection to bring the trailer.”
While some renovations that were completed address the technical aspects, others are more for aesthetics. Silvia said the checkout counter is made of wood from a Sleeping Giant State Park pine tree that fell down during the microburst last year. He said the designs of old newspaper advertisements on the counter were kept the same at the request of the customers.
“We’re excited at the fact that the neighbors are really loving the place,” Silvia said. “They have really taken to us.”
Silvia said the restaurant will have a grand opening ribbon cutting ceremony with music and entertainment on Memorial Day weekend with the Chamber of Commerce in attendance. Silvia said he has wanted to own a restaurant since he graduated from culinary school in 1977.
“I’m excited about it,” Silvia said. “I’ve been waiting 65 years to open a restaurant. I finally got a restaurant.”
