3 easy air fryer recipes to try

More and more people have been adding air fryers to their kitchen and with good reason. They cook all sorts of food quickly, with less oil, and add amazing texture. But they can be a little intimidating to use at first. Below are 3 simple recipes to try. Serve them with a variety of sides to make several different meals. They all happen to be gluten free and dairy free as well. 

Healthy Chicken Fingers

Serves 2-4

Ingredients:

•    1 lb chicken tenders

•    ½ cup pickle juice

•    ½ cup pecans

•    ½ cup oatmeal 

•    1 tsp salt

•    2 tsp Old Bay Seasoning 

•    Spray oil 

Instructions:

1.    Preheat the air fryer to 400 degrees. Spray basket with oil. 

2.    In a blender or food processor, add the pecans, oatmeal, salt, and Old Bay Seasoning. Place in a gallon ziplock bag. 

3.    In a bowl or shallow plate, add the pickle juice. Dip all your chicken tenders in the juice. For more flavor, let the tender sit in the juice for 4-24 hours.

4.    Straight from the pickle juice, add the tenders to the ziplock bag.  Shake the bag to coat all the tenders in breading. 

5.    Add tenders to the air fryer and cook for 13-14 minutes or until the outside is crispy and the juices run clear/the internal temperature is 165 degrees. 

Fajita Vegetables

Serves 2-4

These are perfect for so many different meals! Add them to tacos, serve on a burrito bowl, or pair them with chicken!

Ingredients:

•    1 green bell pepper

•    1 red bell pepper

•    1 onion

•    1 tsp garlic powder

•    ½ tsp onion powder

•    1 tsp cumin

•    Salt and pepper to taste

•    1 tbs avocado oil (any cooking oil works)

•    Juice from ½ lime

•    Optional: 2 tbs fresh cilantro

Instructions:

1.    Preheat air fryer to 360 degrees.

2.    Cut peppers and onions into strips—about 2 inches long and ½ inch thick (precision isn’t necessary.)

3.    Combine peppers, onions, salt, pepper, onion powder, garlic powder, cumin, and avocado oil in a bowl. Toss to coat. 

4.    Add veggies to the fryer and cook for 7-9 minutes, shaking half-way through, or until veggies are browned and tender. 

5.    Transfer to a serving dish. Add lime juice and cilantro and toss. Serve!

Crispy Potato Wedges 

Serves 2-4

These potatoes are delicious served as a side with dinner or alongside eggs and fruit with breakfast!

Ingredients:

•    3-4 large potatoes (russet work best)

•    2 tbs avocado oil (or any other cooking oil)

•    1 tsp salt

•    ½ tsp smoked paprika

•    1 tsp garlic powder

•    ½ tsp onion powder

•    Optional: 2 tbs fresh parsley for garnish

Instructions:

1.    Preheat air fryer to 400 degrees.

2.    Cut potatoes into wedges (about ½ inch thick)

3.    Add potatoes to a bowl with oil, salt, paprika, garlic powder, and onion powder. Toss to coat.

4.    Add to air fryer basket and cook for 10 minutes. Shake basket then cook for another 10 minutes.

5.    Transfer to a serving dish and add optional parsley!
