MERIDEN — As the dinner crowd picks up at AmericanSoul Kitchen & Bar, the months-old soul food restaurant is focusing on expanding its lunch and brunch menus. 

“Things in general have been pretty good. It's been a steady climb, which is nice,” owner Richard Pennyman said. 

Since opening in October, the restaurant, 164 Scott St., has added new offerings. 

In addition to the shrimp (or fish) and grits, chicken and waffles, and other dinner items, the restaurant is now serving fish and chips, salmon, surf and turf and NY strip. Deviled eggs and fried green tomatoes were added to the appetizer menu, and country fried steak is coming soon.

Pennyman said the new lobster grilled cheese and lobster mac and cheese have been popular. 

“We want to continue to grow, especially our breakfast and lunch segment,” Pennyman said. 

Late next week he plans to roll out an expanded lunch menu, including salads, sandwiches, wraps and more to-go food. 

After that, breakfast sandwiches and burritos are expected to be available on the weekends. 

The brunch menu includes special eggs benedict offerings and pancake and French toast specials. 

“We do have a lot of repeat (customers) and people that are constantly bringing people and that's just the biggest compliment,” Pennyman said.

Some have come from as far as Milford and Bridgeport. 

Pennyman opened AmericanSoul Kitchen & Bar with the goal of providing soul food in a full restaurant setting. 

“People are really enjoying the 360 experience,” he said.

Since opening, AmericanSoul has also launched a happy hour Wednesday through Friday, from 3 to 6 p.m., with half-off appetizers and drink specials. 

AmericanSoul Kitchen & Bar is open Wednesday and Thursday 11:30 a.m. to 9:30 p.m., Friday 11:30 a.m. to 10:30 p.m., Saturday 9 a.m. to 10:30 p.m. and Sunday 9 a.m. to 8 p.m. 

Brunch is available Saturday and Sunday from 9 a.m. to 2 p.m.

The restaurant’s head chef is Dimitri Farthing.
