There’s nothing like an already made breakfast ready to pop in the oven on a cold winter morning. This French toast casserole can be made the night before and baked in the morning. I made a gluten free and dairy free milk version, but any bread can be used and any type milk.

Ingredients:
French toast:
■8 pieces of cut up bread (I used Udi’s Gluten Free white bread)■8 eggs beaten■2 ½ cups of milk (I used unsweetened coconut milk)■3 tablespoons brown sugar (I used coconut sugar)■1 ½ teaspoons cinnamon
Topping:
■4 tablespoons cold chopped up butter■½ cup sugar (I used coconut sugar)■½ tablespoon cinnamon■¼ cup flour
Icing:
■1 cup powdered sugar■2 tablespoons milk (I used coconut milk)
Steps:
1.Roughly chop up 8 pieces of bread and spread out in a greased casserole dish.
2.Mix together eggs, milk, brown sugar and cinnamon in a bowl.
3.Pour mixture over bread.
4.Refrigerate overnight
5.In the morning make the topping by mixing the cold butter, sugar, cinnamon and flour together until it crumbles in a bowl.
6.Sprinkle on top of the bread mixture.
7.Bake at 350 for an hour or until a toothpick comes out of the middle clean.
8.Combine the powdered sugar and milk to make the icing.
9.Drizzle on top of the French toast bake.
