Plan B Burger Bar is on track to open a new location early next year, at the corner of Spring and Queen streets, a former Bertucci’s.

The Southington location will be the seventh Plan B Burger Bar in Connecticut, in addition to restaurants in Springfield, Massachusetts, Ashburn, Virginia and Washington, D.C. The Southington restaurant will mirror the other locations in terms of menu and decor.

We recently visited the Glastonbury restaurant to learn more about Plan B.

The bar is named for its three main areas of focus: beer, bourbon and burgers.

The burger options include the popular Breakfast Burger with bacon, cheddar cheese, a fried egg, and spiced maple aioli on a croissant bun. The Baja Burger features avocado, jalapenos, tomato, jack cheese and lettuce with a chipotle spread.

There are also burgers made with beef brisket, like the Smokehouse Burger (featuring an onion ring), a half beef, half pork burger called The Squealer, and the Phili Steak Burger with sliced steak.

Non-beef options include an organic veggie burger with beans and quinoa, chicken burger, turkey burger and wild Alaska pollock.

The menu features a variety of appetizers and sides including soups, salads, mac and cheese and tacos — many of which highlight Plan B’s smoked meats.

Beer & Bourbon

The restaurant purposefully serves only American-made beers and ciders. Some local drafts include Two Roads and Stony Creek Brewery varieties.

“We try to use local breweries as much as possible,” said Marketing Director Lindsey Burke. The company is looking into partnering with some of Southington’s own breweries for hyper-local options.

Most of the chain’s locations are also equipped with a tall eye-catching bourbon wall behind the bar. Bourbon varieties range from Kentucky straight, small batch, ryes and Tennessee whiskey, or single barrel.

You can also try a small flight of just Kentucky straight, small batch or single barrel varieties.

Rustic, modern feel

Diners who have visited the other locations will feel a sense of familiarity in the new location, with its hip, modern feel, dim lighting, dark furniture and subtly meat-related decorations like meat hook light fixtures.

Burke said they also plan to commission local artists for other decor.

New menu items

Burke said they plan to use the wood-fired ovens left behind by Bertucci’s in some way, although it’s not clear how yet.

“We saw the opportunity and said 'why would we tear these out, let's take advantage of them,’” Burke said of the possible new menu items.

She said they’re also looking to use the Southington location opening as a chance to get more creative with the menu as a whole, but had no details yet.

A Southington welcome

Burke said the community has already given Plan B an overwhelming welcome.

“We've opened a lot of restaurants over the years and the amount of buzz and excitement for Southington is so overwhelming; people are just so excited for it,” she said.

She said it’s been a “staggering” response of emails and calls, more than they usually see.

This will be the group’s seventh Plan B Burger restaurant in Connecticut and tenth overall.

Plan B is owned by Locals 8, a restaurant group that includes Tisane and The Half Door in Hartford as well as Butchers & Bakers in Farmington.
