With school starting this week, I decided to look for a healthy snack that parents can make ahead of time to keep the kids full and happy after school. I love the flavors of peanut butter and jelly, and found this healthy alternative that can be made in less than half an hour.
You Will Need: ½ cup of peanut butter, ¼ cup honey, one cup rolled oats, ¼ cup flaxseed meal, ¼ teaspoon salt, 10 ounces of your preferred flavor jam (I used raspberry), two tablespoons of chia seeds.
To Make: Spray a 9x9 inch glass pan with cooking spray, set aside. In a microwave safe bowl combine the peanut butter and honey and microwave in 20 second increments, stirring between each, until smooth and well combined. In a separate bowl, combine the oats, flaxseed meal and salt. Once the peanut butter mixture is smooth, add the dry ingredients and mix well until the oats are coated. Press ¾ of the mixture into the bottom of the glass pan and put in the refrigerator to set for about 10 minutes. While it is setting, pour the jam in a microwave safe bowl and add the chia seeds. Microwave for about 30 seconds then stir well. Once the peanut butter base it set, spread the jam on top and crumble the remaining oat mixture on top. Allow to set in the refrigerator and cut into bars. These can be messy once the jam warms up out of the refrigerator, but they are delicious!
