Expand food waste program
I was interested to learn that there is a plan to collect food waste, and compost it, thus reducing the amount of material that goes into the landfill. This scheme has been successfully tested based on collections from private homes in residential areas. But if this program is to be successful, the food service providers need to be brought into the process. Restaurants, pizza and taco shops, school cafeterias, and hospitals and nursing homes will be the big providers of leftover food. They will generate the economies of scale that will make this effort viable. Any organization, for profit or not for profit that has a license from the Health Department to serve food should be encouraged to participate.
